INGREDIENTS:

  • 12 ounces (340g) penne pasta

  • 3 tablespoons extra virgin olive oil

  • 4 cloves garlic, minced

  • 1 can (14 ounces) crushed tomatoes

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon red pepper flakes (adjust to taste)

  • Salt and black pepper to taste

  • 1/2 cup (120ml) full-fat coconut cream

  • 1/2 cup grated vegan Parmesan cheese

  • Fresh basil leaves for garnish

DIRECTIONS:

1.     Cook the Penne:

  • Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

2.     Prepare the Sauce:

  • In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

3.     Add Tomatoes and Seasonings:

  • Pour in the crushed tomatoes, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir well and let it simmer for 10-15 minutes, allowing the flavors to meld.

4.     Incorporate Cream and Parmesan:

  • Lower the heat and stir in the full-fat coconut cream and grated vegan Parmesan. Simmer for an additional 2-3 minutes, or until the sauce thickens.

5.     Combine with Pasta:

  • Add the cooked penne to the skillet, tossing to coat the pasta evenly in the creamy tomato sauce.

6.     Serve:

  • Plate the Tuscan penne pasta, garnishing with fresh basil leaves and additional Parmesan if desired.
